Broccoli Soup with Salish Hamburger Mountain-Tasty Broccoli Soup with smoky Salish salt is a taste bud pleaser!

This is my tasty take on Broccoli and Cheddar Soup but WAY healthier and WAY more interesting. Salish salt is naturally slow smoked in alder wood and makes this dish superb.

INGREDIENTS:
1/2 medium yellow onion-diced
1 head of broccoli including stalks-        ...roughly chopped 
white wine for deglazing
1 1/2 cup washed, fresh spinach leaves
2 tsp good olive oil
Freshly ground black pepper
4-6 cups water
1 tsp chicken base (bouillon) or veggie stock
1/2 lb ground hamburger 10% fat
Pinch of Salish salt (smoked salt) and more to taste, but don't over do it.
Sharp cheddar-shaved for garnish

Saute onions in olive oil in 4-5 quart soup pot until soft. Add broccoli and water and bring to a soft boil over medium high heat until broccoli is al dente. Turn off heat, add spinach, pepper, and chicken or veggie base.  Blend with a hand mixer til smooth or let cool and blend in food processor. Leave small bit of broccoli if you want.
In non-stick pan brown hamburger, sprinkle with barely any salt. Place in bowl and ladle soup around your hamburger mountain. Place shaved cheese on side of bowl at last minute. Enjoy!! ;)
