NOT your Momma's Meatloaf-I've never been good at meatloaf, but I think I may have broken through!

To tell the truth, I've always been poor at meatloaf. It never turned out consistency-wise: too gooey in the center, too dry on the outside, or not enough flavor to where you have to slather it with ketchup to make it interesting.  Growing up my mom would make this standard dish alot and so I decided I better conquer it at some point to pass along the traditions of comfort meat in a loaf.

Recipe & Ingredients:  (Preheat oven to 350 degrees F.)

3/4 cup oatmeal
1/2 cup buttermilk plus a couple tablespoon of milk to thin slightly.

Combine in a glass bowl and let soak while you mix the rest up. In a large mixing bowl, combine in this order:

2 eggs-whisked
2 tablespoons Worcestershire sauce
2-3 generous dashes of Bloody Mary mixture seasoning (Demitri's is da bomb! Add more too taste, but this stuff is strong so watch yourself)
2-3 tablespoons ketchup
1/3 yellow onion in a tiny dice
1/3 red bell pepper in a tiny dice
Herbage-winter savory, parsley, basil
Whisk together until well combined.
Pinch of kosher salt and a couple grinds of fresh black pepper, but be careful here depending on the Bloody seasoning you add.

Add: 1 lb ground dark turkey meat
Mix thoroughly!
Add 1 lb 10% ground beef
Mix thoroughly!
The egg mixture and the two meats should be near a homogeneous mixture. I started with a silicon whisk through the turkey stage and then switch to a large and sturdy metal spoon.

Add the oatmeal mixture as well as around 1/4 cup of finely grated Pecorino Romano cheese.
Stir until well combined.

Lightly oil (I used grapeseed, but EVOO works great, too.) a baking dish. You can use ceramic or Pyrex works great, too. Instead of a rectilinear loaf, I prefer to free form mine into a nice oval shaped masterpiece around 2-3" tall and 9-10" long roughly.

You can add a sauce to the top like more ketchup and some thinly sliced onions or cheese, but I prefer mine plain. Bake in the middle top of the oven for about an hour or until the center nears 160 degrees F.
Turn on the broiler for the last few seconds to get a nice brown crust as desired. (Watch it! Don't burn it!) Let rest 5-10 minutes and enjoy! Serve with roasted potatoes and a hot veggie!

Now you can modify this recipe to make it less Italian by say subbing out the cheese for a Pepper Jack and the Bloody Mary seasoning for salsa. Add oregano as the herb and serve with sour cream and blue corn chips.

You can also change up the meat and add pork instead of beef but I definelty would recommend mixing the meats. It gives much more depth of flavor than all beef or all turkey!
